Not to knock normal biscuits... but once you go Cheddar, you never go back.

1 block, Sartori® Old World Cheddar, shredded
3 cups All-Purpose Flour
3 Tbsp. Granulated Sugar
1 Tbsp. Baking Powder
1 tsp. Garlic, minced
¾ tsp. Kosher Salt
¼ tsp. Paprika
1 stick Unsalted Butter, cold and cubed
6 Tbsp. Unsalted Butter, melted
1 cup Buttermilk
1 large Egg
Preheat oven to 375 degrees. Line two baking sheets with parchment paper.
In a bowl, mix the dry ingredients and garlic. Add cubed butter and combine with pastry cutter until the butter is almost fully blended into the dough. Stir in about ¾ of the Old World Cheddar.
In a separate bowl, whisk the buttermilk and egg. Make a well in the center of the flour mixture. Using a spoon to stir, slowly add in the buttermilk and egg mixture. Stir until a dough is just formed (over mixing will make tough biscuits—we’re after fluffy).
Scoop the dough, 6 on each prepared baking sheet. Brush each biscuit with melted butter (keep the leftover butter handy) and top with remaining shredded Old World Cheddar.
Bake for 15 minutes. Brush each biscuit with more melted butter and rotate baking sheets. Bake until the biscuits are a light golden brown, about 10 minutes more.
Once out of the oven, brush the biscuits one more time with melted butter. Cool at least 10 minutes.
