This beloved dish, once thought of as cold weather fare for sharing, is transformed into a decadent make-ahead treat for one. Processing the fondue in a blender is an optional step, but does help ensure a smooth texture upon re-heating.
Reheating and serving in coffee mugs helps retain the fondue's heat. Serve with crisp, seasonal vegetables, crackers, and fruits.
This fondue is also excellent served with french fries!
1 heaping tablespoon cornstarch
½ teaspoon ground mustard
¼ teaspoon garlic powder
½ cup chicken or vegetable broth
1 ½ tablespoons butter
¼ cup minced onion
1 cup pilsner
14 ounces Sartori Old World Cheddar, Sartori Farmhouse Cheddar, or a combination of the two, shredded
Salt and Pepper to taste
Dippers of choice: Assorted seasonal vegetables, fruits, crackers, hard breadsticks
Combine the cornstarch, ground mustard, and garlic powder in a bowl; whisk in the broth until smooth; set aside.
Melt the butter in a large saucepan over medium-high heat. Add the onion; saute 3 minutes or until tender. Whisk the pilsner into the reserved cornstarch mixture and add to pan. Bring to a boil and cook 1 minute or until thickened, stirring often. Remove from heat and whisk in cheese a handful at a time until fully melted.
Transfer fondue to a blender; remove center piece of blender lid to allow steam to escape and cover opening in blender lid with a clean towel to avoid splatters. Process on low until very smooth. Add salt and pepper to taste.
If using immediately, transfer to a fondue pot and serve according to manufacturer's directions. For make ahead, transfer fondue to a glass bowl and cool to room temperature. Cover and chill (can be stored in the refrigerator 2-3 days). To serve, spoon desired amount of fondue into a coffee mug. Partially cover and heat in a microwave 15 seconds at a time, stirring frequently, until heated and smooth.
