This oh-so-easy appetizer is at home on a picnic or as part of an elegant party spread. You can make the glaze a day ahead; store covered in the refrigerator and reheat in a microwave a few seconds at a time until desired consistency. The skewers can be assembled up to an hour ahead of serving; store covered in the refrigerator.
Tomato Basil BellaVitano®
¼ cup balsamic vinegar
1 tablespoon brown sugar
1 Pinch salt
5 slices (about 4 oz. total) prosciutto
20 mixed color cherry tomatoes
20 Fresh basil leaves
1 5.3 oz wedge Tomato BellaVitano , cut into 20 bite sized pieces
20 (3 to 4-inch) wooden skewers
To prepare glaze, combine vinegar, brown sugar, and salt in a saucepan over medium heat. Bring to a boil, stirring constantly; reduce heat to low and simmer 1 minute or until slightly thickened, stirring occasionally. Remove from heat; transfer to a small heatproof bowl and cool to room temperature.
Tear or slice each piece of prosciutto into 4 lengthwise strips.
Thread each skewer with 1 piece prosciutto, 1 tomato, 1 basil leaf, 1 piece cheese. Serve drizzled with glaze.
